Pierogi Party

Cooking Classes Part Duex: Pierogi

My girlfriends and I signed up for another cooking class - this time Pierogies: Blueberry, Meat, Cheese & Potato

Ingredients for the Pastry: 
  • 1 kg of flour
  • 2-3 eggs
  • a little salt
  • warm water
  • Mix ingridients and knead it
  • Make a thin cake dough with using a rolling pin
  • Cut off small circles (trick: use a cup for the circles)
  • Fill the pastry with filling
  • Pinch the edges 
  • Cook in salt water about 3 minutes from when they are on the surface
Cheese and Potato Filling: 
  •  250-300 grams of semi-skimmed (semi-hard) cottage cheese
  • 1 -1.5 kilo old potatoes
  • A little salt
  • Peel & cut potatoes 
  • Cook potatoes in salt water, drain & smash
  • Once potatoes have cooled, add cottage cheese and salt & pepper to taste
  • Topping: Bacon & sauteed onion (typical for Day 1) or Sour Cream (typical for day old)
 Meat Filling: 
  • 300-500kg of cooked meat 
  • 1 large onion
  • Marjoram 
  • Salt
  • Pepper
  • Mix meat with fried onion. Add a sprinkling of Marjoram and salt & pepper to taste
  • Topping: Bacon and onion
Blueberry Filling: 
  • 2 cups of blueberries (note: You can use any fruit you wish for this)
  • 2 tablespoons of sugar
  • Butter 
  • Cinnamon
  • Add a little sugar to the blueberries and fill. 
  • Topping: Melted butter, brown sugar, cinnamon
